Simple Ramen Stir Fry
INGREDIENTS
- 2 tablespoons soy sauce 
- 1 teaspoon toasted sesame oil 
- 1/2 teaspoon red curry paste 
- 1/4 teaspoon ginger paste or minced ginger 
- Bok Choy or Spinach 
- Sliced Mushrooms 
- 1 Pack of Lotus Foods Brown Rice Ramen 
- Frozen Edamame 
- 1 Carrot cut into thin slices 
- 1/4 cup veggie broth 
- Squeeze of lime juice 
- Fresh Cilantro 
DIRECTIONS
SERVINGS: 1-2 PREP/COOK TIME: 15 MINUTES
- 1. Fill the pot with water and bring to boil for noodles. - 2. While that is cooking mix your sauce ingredients together: tamari, sesame oil, red curry paste, and ginger. - 3. Place your noodles in boiling salted water and cook for 2 minutes. - 4. While those cook put bok choy and edamame along with mushrooms and carrots in a skillet over medium-high heat with sauce. Let all the veggies saute while the noodles cook. - 5. Drain noodles after 2 minutes and add them to skillet mixture with veggie broth. Cover and simmer for 2 minutes. Serve with Cilantro, a squeeze of lime, sesame seeds, kimchi, chili sauce, etc.
