Paleo-ish Pumpkin Pie

I am a big believer in enjoying Thanksgiving day and everything that goes along with it, but I did want to see if I could make a delicious pumpkin pie without a store bought or gluten filled crust and I feel like I nailed it!

I took a few different recipes I found online because I’m not the best baker usually. I took pieces from each that I liked and created this Grain free/mostly dairy free pie! (There is Grassfed butter in the crust because I didn’t have enough ghee 😅).

Paleo-ish Pumpkin pie

1 1/2 cups Almond Flour
1/3 cup coconut flour
1/2 teaspoon cinnamon
1 medjool date
6 tbsp Grassfed butter or ghee
1/4 teaspoon salt

Combine everything in blender/food processor and pulse until the mixture somewhat holds together (will be a bit crumbly)

Grease pie dish with coconut oil.

Press dough into pie dish until it covers it fully and has a little crust on sides.

Put in oven for 7 minutes at 325

Pie filling-

1/2 cup coconut milk
1 can organic pumpkin
1/2 cup coconut sugar
2 tablespoons maple syrup
2 eggs
2 teaspoon cinnamon
2 teaspoons pumpkin pie spice
1/2 teaspoon salt

Combine all filling ingredients then pour onto pie crust and cook for 50- 55 minutes.

Coconut whipped cream

1 can coconut cream
1/2 cup powdered sugar
1 tsp vanilla

Whip all the ingredients in a chilled bowl till it forms a whipped cream texture- can freeze a bit too to thicken it.
