Mediterranean Power Bowl



I had a craving for Mediterranean food the other day so I decided to whip this up for lunch using all of the veggies that I had prepped earlier in the week. Do you meal prep? I like to think that meal prepping comes in all forms and fashions, it doesn't have to be that typical tupperware filled with 6 of the same meals type thing if you don't want it to be (not saying that is bad in any way)!


Since I work from home I prefer to just have all my veggies chopped and washed and ready in the fridge for me to grab what I need. If I want to cook something it is easy enough to grab without doing much or maybe I just want some raw bell pepper to snack on, either way I am prepped!


Anyways back to the power bowl, a power bowl is basically just a bowl filled with TONS of veggies, protein, healthy fats, fiber, and greens! You can style them up however you like but this one has more of a mediterranean take.


Mediterranean Power Bowl

Chicken Breast sliced into tenders
Olive Oil
Quinoa
Herbes De Provence
1 Garlic Clove
Cauliflower
Yellow Beets
Corn on the cob
Spinach
Red onion
Carrots
Purple Cabbage
Cucumber
Radish
Parsley
Chives
Lemon
Hummus

Cook Quinoa ⁣⁣⁣based on package instructions with broth instead of water, also add 1 smashed garlic clove for more of a garlic flavored quinoa.

Take Chicken breast and toss with with olive oil and herbes de provence and salt. Place chicken on baking sheet with some cauliflower, beets and corn on the cob, all tossed with a little salt, pepper, pinch of herbes de provence, and olive oil and roast in oven at 375 for 20 minutes.

Gather all your toppings:

spinach

red onion

carrots

purple cabbage

cucumber

radish

parsley

chives


Put it together with the quinoa and roasted veggies/chicken with some hummus and fresh squeezed lemon juice and you have made a Mediterranean Power Bowl!
