Instant Pot Vegetable Soup



We have come to the point in our week where we have run out of last weeks groceries and are down to lots of scraps and slim pickings for options, this is usually a great time to make a vegetable soup because I usually have a little bit left of everything and always have frozen veggies on hand!


I also had some vegetable broth that needed to be used up so what better dish than vegetable soup. I decided to use the Instant Pot because I was short on time during my lunch break and it makes a flavorful soup in such a short period of time!


The #1 tip and trick is always sauté your vegetables, this will create a deeper flavor than if you were to just toss a bunch of raw veggies in there. You can also choose whatever assortment of veggies you have on hand, play with this recipe I encourage you to give something new a try!


Variations could include: Squash, zucchini, spinach, kale, green beans, cauliflower, etc.


Also I did this in the Instant Pot but you can obviously cook on the stove too it will just take a bit longer I imagine!


Instant Pot Vegetable Soup

2 celery sticks chopped
2 carrots chopped
1 small yellow onion chopped
1 cup leeks chopped
4 garlic cloves minced
2 cups vegetable broth
1/2 cup water
1 1/2 teaspoons thyme
1 teaspoon oregano
Salt and Pepper
2 tablespoons Avocado oil
1 cup frozen corn
1 cup frozen peas
Handful of fresh parsley
2 bay leaves
1 can diced tomatoes

Start by heating your Instant Pot to Sauté and put your Avocado oil in to heat. Once it starts to shimmer throw in your carrots, onions, and celery and sauté till soft. Once soft add in your minced garlic for about 1 minute.


Next add in your can of diced tomatoes and salt and pepper and thyme and oregano and stir it all around. With the salt and pepper I would say maybe a couple teaspoons worth of salt and 1 tablespoon of pepper.


Next add in 2 cups of vegetable broth and 1/2 cup water, the frozen veggies, and bay leaves and parsley (leave some for garnish).


Close instant pot set to sealed position and select "Soup" for 7 minutes. After it cooks and beeps let it sit for 5 minutes then do quick release on Instant Pot and serve! Hope you love it as much as I do!
