Instant Pot Lentil Taco Soup


Have you been hopping on board the meatless meal train like everyone else lately? I will be honest it was something I was a little resistant to at first. For some reason I felt I was going against my beliefs or something as if it is a religious decision, which for me it is not. Then I started to come around to it after changing my perspective on the whole thing. Instead of focusing on the fact that I was not having meat I started focusing on the fact that I was eating more plants!


Anyways, enough about my reasons behind everything, I wanted to share this super easy Instant Pot lentil taco soup recipe with you guys because if your life is anything like mine right now you are STILL adjusting to quarantine life and sometimes you just need a really easy meal!


Side Note - Get creative with the toppings, I like Siete chips, jalapeños to make it really spicy, salsa, pico de Gallo, guac, or like pictured: avocado, dairy free sour cream and cheese, and cilantro and scallion.


INSTANT POT LENTIL TACO SOUP⁣

1 can organic black beans ⁣
1 can organic green chiles ⁣
1/2 jalapeño diced⁣
1 cup whole lentils (I used green) ⁣
2 cups vegetable broth⁣
1 cup water ⁣
1 can organic tomato sauce or diced tomatoes depending on preference ⁣
1/2 cup diced bell pepper ⁣
1/4 cup diced onion⁣
2 garlic cloves minced⁣
1/2 cup frozen corn (optional) ⁣
Handful of cilantro ⁣
1/4 cup chopped green onions ⁣
1 tablespoon @primalpalate taco seasoning⁣
1/4 teaspoon cumin⁣
1/4 teaspoon oregano ⁣
1/2 teaspoon salt and pepper⁣

Mix all together in instant pot and pressure cook for 15 min sealed position and then let vent after 5 min.⁣

*Or cook in regular pot for likely 30 min or until lentils are cooked completely!⁣
