Instant Pot Chicken Zoodle Soup

Originally I wasn’t going to post this recipe, I figured everyone has their favorite chicken noodle soup recipe by now and it’s easy to sub zoodles in any of them. You guys are amazing though and I had a few people ask for the recipe so here is my personal take on chicken zoodle soup in the instant pot!

Instant Pot Chicken Zoodle Soup

2 Organic Pasture Raised Chicken Breast
5 Cups Organic Chicken Bone Broth
1 cup water
1 teaspoon thyme
1 teaspoon rosemary
1 sage leaf
Fresh parsley
2 bay leaves
1 cup chopped celery
1 cup chopped carrot
1 cup chopped onion
2 cloves garlic
Handful of spinach or kale
1/2 zucchini
1 teaspooon Salt and pepper
2 Tbsp Ghee

1. First thing you will do is set your instant pot to Sauté and melt your ghee. Throw in chopped onion, carrot, and celery and sauté until soft/translucent, maybe 4-5 minutes. Then throw in garlic.

2. Let garlic cook for 30 seconds to a minute then add your chicken breast, seasonings except parsley and cover with water and chicken bone broth.

3. Put lid on instant pot and set to manual pressure cook for 8 minutes.

4. While your soup is cooking you will spiralize your zucchini. I recommend wide flat spirals so you don’t have to cook the zucchini before hand, it cooks in the broth instantly.

5. After the soup is done cooking let it sit for 10 minutes naturally releasing pressure before letting air out using quick release.

6. Take chicken out and shred it, then add back to soup. You can add you spinach or kale at this time too. After it sits for a few minutes pour mixture over zoodles and enjoy!
