Feeling Saucey!

I absolutely love sauces, like seriously I feel every meal should have a sauce to go with it. Is that just me? Well you are in luck if you love it too because I have some killer sauce recipes I will be sharing with you guys!


To start us off we are going to do one of my all-time favorites and a staple in our house, Lemon Basil Cream, this stuff is great with fish/chicken/rice/veggies all of it!


I will be sharing the recipe for how to make this sauce using coconut cream to make it dairy free but if you want to use heavy whipping cream you totally can! I do recommend if you make it using normal cream that you try and find some from a local farm in your area. You can do that by checking out this site and be sure to stay tuned for my upcoming post on shopping local!




Lemon Basil Cream Sauce


4-5 tbsp of Ghee or butter
1/2 onion diced
3 cloves garlic
1/2 cup white wine (or apple cider vinegar)
1 cup chicken broth
Handful of fresh basil chopped or 1/2 tbsp of dried basil
1/2 cup coconut cream (coconut milk is fine too)
1 whole lemon
Salt

1. Heat butter or ghee over medium heat and once hot then throw in onions and sauté till translucent. Next add your garlic and sauté till starting to lightly brown.

2. Pour in wine or vinegar and deglaze pan. Cook off the vinegar or wine for about 5-7 minutes or more if needed.

3. Next pour in chicken broth and add basil and salt (maybe about a teaspoon), cook on a simmer for about 10 minutes till it’s reduced some. If you have immersion blender use it now and blend up the mixture, or could use normal blender.

4. After blended (if you don't like the onion pieces) pour in coconut cream and heat to a simmer for another few minutes. Remove from heat and squeeze lemon juice in and serve!
