Easy Skillet Chicken and Rice

Recipe below is enough for 2-3 people depending on portion sizes.

I don't know about you but I love one skillet dishes, I literally only used a cutting board and a skillet when prepping this dish! To start off I want to say that you don't HAVE to do chicken in this. It can honestly go with any protein: Sausage, ground beef, Shrimp, Tofu, etc.

It uses ingredients most people have in the house which is how I stumbled upon this dish. I had bought a rice made by Banza which is a company that makes pasta and rice out of chickpeas! Much more nutrient dense and I personally can't tell a difference. You don't have to use Banza rice of course you can use brown, jasmine, cauliflower but I do recommend trying the brand sometime!

You can also play with the seasoning, say you like thyme more than cajun seasoning, or you have a all season you like- try it! Hope you enjoy and as always please reach out if you have questions or thoughts!

Easy Skillet Chicken and Rice

1 tablespoon ghee
2 tablespoons Cajun seasoning
1 teaspoon of pink or sea salt
1 teaspoon old bay seasoning
1/2 cup yellow onion chopped finely
1/2 cup Baby Bella mushrooms finely diced
2 large cloves of garlic minced
2 cups frozen greens
2 cups Rice of choice cooked accordingly
1 lb chicken breast

1. First you will season your chicken breast with Cajun Seasoning, old bay, and salt. After it is seasoned you will melt ghee in a skillet and put the chicken in when it is hot and cook on each side 4-6 minutes depending on thickness (I like my chicken breast thinly sliced).

2. While the chicken is cooking dice up your veggies finely.

3. Remove chicken from skillet and let rest.

4. Add a pinch more ghee to the pan and then toss in your onions and mushrooms. Let them sauté over medium heat until the onions start to brown a little bit, about 7 minutes stirring occasionally. Next throw in your garlic and let that sauté another 3-5 minutes stirring occasionally. You can slice your chicken up now to toss in soon.

5. Next you will add in your frozen greens and let those cook down. Then you can add in your cooked protein and your cooked rice. Add salt to taste and maybe another pinch of old bay if it needs it. Stir together and let rice get a little crispy in the pan for 1-2 minutes and serve!
