When I decided to make cashew alfredo I have to say that I was honestly skeptical. You see, I have an amazing alfredo recipe that I worked on perfecting over the years using all the butter, cream, and parmesan. It is still one of my favorite recipes to date! Unfortunately my stomach does not always agree with dairy so I really wanted to make a dairy free alfredo pizza recipe. I chose cashews because honestly, I just eat SO much cauliflower I wanted to change it up LOL!
Now as you can see this recipe is titled Cashew Alfredo "Flatbread" and not "Pizza", this is because I tried this sauce originally on a Udi's gluten free pizza crust that was honestly terrible. The sauce literally saved the pizza, I was so impressed!
I decided the next time I made it I wanted to use Simple Mills bread mix and make a flatbread. I topped it with Caramelized Onions, a kale, spinach, chard frozen greens blend, and Miykos Vegan Mozzarella, asparagus, and corn. This sauce would also be amazing with some pasta!
I think one of the most important parts to this alfredo recipe is the caramelized onions and garlic! They add so much flavor to the dish so don't skip this part!
1 cup cashews (soaked in water 4+ hours if you can)
3/4 cup filtered water
1/2 cup sliced onion
2 garlic cloves minced
1/4 teaspoon rosemary
1/4 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 tablespoon lemon juice
3 tablespoons nutritional yeast
1 tablespoon ghee or avocado oil
1. To start you will heat a pan on medium heat with the ghee or avocado oil. Once hot toss in your onions and let those simmer for a few minutes. After they have started to turn translucent and brown a little you can throw in your garlic. Let these sauté for about 2-3 more minutes then remove from heat.
2. Drain your cashews if you were soaking them and toss them into a high speed blender with all of the ingredients including your caramelized onion and garlic. Blend on high for 30 seconds to a minute. You will develop a creamy sauce and once you see that it is ready!
3. Put sauce on pizza/flatbread/pasta and top with your desired toppings!
